Beer for Breakfast


Part II of III for food involving vegan and GF beer.

For when you have the munchies or need the hair of the dog.







Beer & Hemp Bread (Muffins)

1/2 cup sorghum flour
1/2 cup brown rice flour
1/2 cup buckwheat flour
1 teaspoon x-gum
1/3 cup Sucanat
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon sea salt

1 tablespoon coconut oil, melted
12 ounces of VGF beer

1 cup VGF (I shouldn't need to tell you) granola
1/3 cup craisins
1/3 cup hempseeds

2 tablespoons coconut oil, melted (for brushing)
Preheat oven to 400 degrees Fahrenheit.  Grease muffin tin or loaf pan.  In a large bowl, whisk together dry ingredients.  Stir in beer and 1 tablespoon of coconut oil.  Stir in the chunks.  Transfer to muffin tin.  Brush tops of muffins with more coconut oil before baking.  Bake 20 minutes or until muffins pass the toothpick test and spring back when touched.  Cool in pan for five minutes then transfer to a rack to cool completely.


Bring with you to eat at metaphysical church fellowship since there are rarely more VGF options than fruit and veggies.  Next week I'm providing part of the spread for fellowship, though, so that situation shall change.
