Lightning Tofu Pudding
Quick dessert—my aunt and uncle and I tore through the Boston Crème Cake Pie that I made from Isa Chandra Moskowitz’s and Terry Hope Romero’s Vegan Pie in the Sky,
so I made dessert for one on Thursday.
Lightning Tofu Pudding
6 ounces silken tofu
4 dates soaked in 1/4 cup water
1 tablespoon black cocoa
2 tablespoons craisins to top (optional)
Soak the dates for 30 minutes, then blend everything minus the craisins. Pour into serving vessel and top with craisins. Drink or spoon.
