Zucchini Banana Coconut Paleo Bread
The second paleo recipe of late...what is this madness?! One of my neighbors gave me an entire bag of Nutiva coconut flour, and this was the first thing I made with it. The Wednesday farmers market is usually a little thin on goods, but one vendor offers an "all you can fit" bag for $10. I used zucchini in this recipe from the farmers market.
This bread is very moist, like most zucchini breads. The key to having it not fall apart is to sweat extra moisture out of it. To make proper shreds, I spiralized the zucchini then snipped it up with kitchen scissors. Then I sweated the extra moisture out if it.

So, lemme get all political for a hot second. Yay for SCOTUS ruling that same-sex marriage is legal in all 50 states. Seriously, yay. But guess what:
